Life's better with cake and a sprinkle of fairy dust
I’ve always wanted to make a rainbow cake with the proverbial pot of gold at the end of the rainbow. This cake was made of six layers of sponge in the colours of the rainbow, iced with Italian Meringue Buttercream and decorated with sugarpaste accents. The tiny pot of gold coins was dusted with edible gold glitter. Next time, I may try to add a wee sugarpaste leprechaun too.
